Sate Rembiga is Lombok's signature satay — beef skewers marinated in a sweet-and-spicy paste of chilli, palm sugar, garlic and shrimp paste, then grilled over coals until caramelised and smoky — and Bu Ririn's Warung Sate Rembiga UTAMA is one of the most respected places to eat it. The dish takes its name from the Rembiga area of Mataram, where it originated.
Unlike the peanut-sauce satay most visitors know, Sate Rembiga is all about the marinade: rich, fiery and a little sweet, usually served with rice or lontong (pressed rice cake). Cheap, fast and full of flavour, it's an essential stop for anyone wanting to taste the real Lombok.
